Consumers are looking for more than just taste from chocolate
2023, the year of new challenges, sweet chocolate and bitter flavors of world changes and influence on the global market of food products production, in our case, especially chocolate and chocolate products. We relied on research from Taste Tomorrow, which is the world’s largest consumer understanding ecosystem in bakery, confectionery and chocolate. By tracking local and global consumer behavior, attitudes and choices, it provides us with valuable, in-depth insights. We are able to use these insights to track developing trends and discover new opportunities.
In order to monitor and measure changes in behavior and attitudes regarding the current economic and political situation, Taste Tomorrow continuously interviews consumers around the world. The latest results show that food is within the top 3 categories where consumers are most concerned about rising prices. Interestingly, only 24% of consumers try to save by buying less chocolates, pralines and other chocolate items, which is the lowest number in the “sweet” category. This number is higher for desserts and ice cream (25%), sweets (27%), cakes, desserts and sweets (29%).

Three major trends emerging from recent global research that will shape the chocolate industry in 2023:
- SUSTAINABILITY, TRANSPARENCY AND CONSCIOUS CONSUMPTION

Nature flourishes – we launched our intensified approach to agroforestry including payment for ecosystem services on 11,000 ha.
Sustainable chocolate – 1 out of 2 products sold contains 100% sustainable cocoa or chocolate.
- PLANT-BASED CHOCOLATE WITHOUT DAIRY PRODUCTS
As environmental, animal health and welfare concerns persist, and with more plant-based options available, many consumers are enjoying vegan and plant-based foods. Therefore, it is not surprising that plant-based chocolate will also become a big trend in the world of chocolate next year. Chocolatiers and confectioners are developing excellent alternatives to traditional milk chocolate that can be enjoyed by consumers who follow a plant-based diet, but will also seduce lovers of traditional milk chocolate. Let’s add that the raw materials used in Hedona’s handmade chocolate products are not tested on animals.

Chocolate is associated with higher endorphin levels and physical health benefits. The magnesium in dark chocolate helps our receptors bind oxytocin better, and the vitamin C in berries and vitamin D in eggs help produce all our happy hormones.
Oxytocin is a hormone that is directly related to love – empathy, sympathy, i.e. human bonding and increasing trust and loyalty. The greatest representation of its receptors is in the uterus and in the brain (in the hypothalamus and amygdala – parts important for the expression of emotions).
Chocolate is traditionally associated with comfort and satisfaction. Many consumers also associate it with reducing anxiety during the pandemic. Search trends for anxiety-relieving foods remained high in all languages surveyed this year.
